Is there any way to know if the east german AKM or AKMS was made with a side folder or with a stock ?
I know that the stock had the year of manufacture molded inside but is there a way to tell if the side folding stock is original to it or not ?

The answer is no. You can rule out the early years ('65-'70, '71 maybe) before the stock was introduced, but unless you had an intact rear stub matched to the kit (see link to exception below) there's typically no certainty that a given rifle kit came with either stock type.
A very nice rifle you have in there.
I collect Iraqi captured rifles and i have a Soviet, and Hungarian AKMSs.
BTW, The rack number is 176 on yours.
Usually Iraqi rifles have a "Jeem" letter stamp on the left side of the receiver indicating property for the republican guards.
I think yours belonged to the Iraqi Army.
