    Double chocolate stout is almost carbed and the dry nibs add outstanding choco flavour, I need to pair it with something over the top sweet ice cream desert thingy.

    I have often done a coffee stout which of course is an excellent morning beer.

    Coffee stout is super easy. Just make any regular stout and at kegging or bottling add a batch of cold brewed coffee.

    I use one of those French press makers and leave it in the fridge for a couple days. Side benefit is it does not bring out the acid in the coffee. Basically you are making a coffee concentrate.

    Sunday is national home brew day, if the weather holds off I should get a Belgian Triple in the fermenter.

    I just started a batch of Mauby wine yesterday. Used a concentrated syrup, diluted it as per the directions on the bottle.. lol I used 4 pounds of sugar.

    It's bubbling nicely and it's in a plastic bucket with a T-shirt over the top... Caribbean pirate style.
