Give it time, lot of imperfections can age out.

A tripel can take 2 or three months. What was your fg?

I keep a brew log, write down all important information. This can be a huge help in future brews or even to diagnose problems. Most kits will even come with instructions and information sheet, i will keep notes on this and put it in my note book.

If your batch was still fermenting when you bottled it you may have bottle bombs in your future.

Couple friends and I have picked 200lbs + of pawpaws for beer projects.

Mine are in the freezer prior to pulping and ageing on a Belgian Quad and a Golden Strong.

Put the hop yard to bed for winter. It was very over grown with crab grass and weeds

    Ok Scottyb,

I'm getting back into brewing.. Been a couple years now.. Whats the latest and greatest for all grain brew setups? I plan on building myself. I still have all the stuff from the photos in my previous post but I am thinking I want to scale back and convert to 3 or 2.5 gallon kegs. I want to design a smaller all grain setup. Any interesting space saving designs out there?

I kinda would like to use gravity feed for all stages, but I do have a couple march pumps I could use... Trying to make it as simple and MINIMIZE the amount of crap I have to clean after brewing...

The latest seems to be all electric systems built for minimal footprint.

    Brewing is 90% janitorial work.

Use what you got and scale back the recipe to make less or you can do split batches and experiment.

Too cold to brew around here. Oddly enough it's not too cold to drink!

The chocolate stout sounds good. You can always send some to me for testing!
